Traditional burgers at most restaurants often contain well over 800 calories (and that’s not including the french fries). This inspired us to create a low carb, low calorie recipe that can satisfy all the delicious burger flavors but in the form of a much lighter and healthier burger bowl.
Low Carb Burger Bowls Recipe
This low carb burger bowl would be great to make on a busy weeknight for the whole family since it is super easy and it gives everyone the freedom to choose their own toppings and add-ins. It would also be a great meal prep option – you can cook the ground beef and prep all the toppings ahead of time and then simply throw them in a bowl when you’re ready to eat.
Bowl Ingredients:
1 lb lean ground beef (96/4)
1 cup shredded cheddar
8 TBSP chopped dill pickles
2-3 roma tomatoes diced
4 slice precooked bacon chopped
6-8 cups shredded lettuce
2 Sweet Potatoes (cut into wedges or cubes)
Light Burger Sauce Ingredients:
½ cup non-fat Greek yogurt
¼ cup sugar free ketchup (we used G Hughes brand)
2 TBSP sweet pickle relish
1 TBSP honey mustard
Directions:
1. Preheat oven to 400 F. Peel and cut 2 sweet potatoes into wedges or cubes. Put in a mixing bowl, spray with zero calorie olive oil spray, season to taste with salt, pepper, garlic powder, paprika, cumin, chili powder and mix until coated. Spray a foil lined baking sheet with cooking spray, spread sweet potatoes on sheet in a single layer. Bake for 20-30 minutes, flipping halfway.
2. While the sweet potatoes are roasting, heat up a large skillet. Spray skillet and place 1 lb lean ground beef in and season with salt, pepper, garlic powder, onion powder, or use a low calorie & low sodium taco seasoning packet (or your favorite herbs and spices).
3. Chop up dill pickles until you have about 1/2 cup, dice your tomatoes, chop the precooked bacon slices.
4. Prepare the burger sauce by simply combing all sauce ingredients.
5. Build your bowl! ¼ of the cooked ground beef + ¼ of the roasted sweet potatoes, ¼ cup cheese, ¼ (or 1 slice) of the chopped bacon, diced tomato, 2 TBS chopped dill pickles, top with 2 cups shredded lettuce, drizzle ¼ cup of the burger sauce on top, mix and enjoy!
